Chocolate Peanut Butter Fat Bombs

Doo do do, do doo do doo, do-do-duh-do-dah-do-dah-dahh-da-dah!

Super Mario Bros!  Okay just me maybe.

I only have two silicone baking trays suitable for fat bombs and they both happen to be video game themed.  This is what happens when you marry a super sexy nerd and have super adorable nerdy children. #SorryNotSorry.

These fat bombs have been my favorite of a handful of recipes I’ve tried over the past three weeks.  The combination of chocolate and peanut butter is an American classic; a staple, really.  But the almond flour adds some texture that provides a little more to the otherwise melty, fatty goodness.

1/2 cup creamy peanut butter (or crunchy if you fancy)
2 TBSP melted coconut oil
1 TBSP cacao powder
1/2 cup fine almond flour

Mix all ingredients together to form a smooth paste.  Divide into a silicone pan or individual muffin liners.

My batch made 16 fat bombs with the following macronutrients:
85 calories
1g NET carbs
7.5g fat
3g protein

I keep these in my freezer at all times.  You can eat them right from the freezer and they still melt in your mouth.  They probably wouldn’t hold up as well in the fridge.  Enjoy whenever!
